Fluorescent protein in eels could diagnose liver disease

Japanese freshwater eel, or unagi, is a very popular sushi dish in the United States and elsewhere. But apparently there’s a lot more to unagi than a savory treat. This particular eel contains a fluorescent protein called UnaG (named after unagi and the color green) that not only makes them glow in the dark in that creepy way, but could also be used by doctors to determine the health of human livers.
